- 1Wash the potatoes very clean under cold running water, scrubbing to remove any dirt.
- 2Place the washed potatoes in a saucepan and cover with cold water. Cover the saucepan with a lid and bring to a rapid boil over high heat.
- 3As soon as the water comes to a boil, immediately pour off all the water.
- 4Cover the potatoes with fresh cold water, add salt, and bring to a boil again over high heat.
- 5As soon as the water boils the second time, pour it off instantly. The potatoes will be sufficiently cooked at this point.
- 6Return the potatoes to the empty saucepan and shake over low heat for 1-2 minutes to dry them. Remove the skins before serving.
