Instructions
- 1Wash the potatoes thoroughly. Peel them with a vegetable peeler or paring knife, and place each peeled potato into a bowl of cold water as you work to prevent browning.
- 2Transfer the peeled potatoes to a large saucepan. Cover them completely with cold water and add the salt. Cover the saucepan with a lid.
- 3Place the covered saucepan over high heat and bring to a boil. Once boiling, maintain a rapid boil for 30 minutes, keeping the lid on.
- 4Immediately pour off all the water from the saucepan. Place the uncovered pan with the potatoes beside the stove (or on very low heat) to allow the potatoes to dry and steam off any excess moisture for 2-3 minutes.
