LEMONADE APOLLINARIS (or Carbonated water)

This refreshing 1917 classic elevates simple lemonade into a sophisticated sparkling beverage using Apollinaris mineral water. The crisp acidity of fresh lemon juice balances perfectly with superfine bar sugar, creating a bright and effervescent drink that is far superior to store-bought versions. Served chilled and dressed with fresh seasonal fruit, it makes for an elegant non-alcoholic refresher or a delightful afternoon treat.

Ingredients

  • 2/3 cup Crushed ice (Originally 'fine Ice'. Quantity estimated for filling mixing glass.)
  • 1 tablespoon Superfine sugar (Bar sugar) (Originally 'Bar Sugar'. Superfine sugar dissolves easier in cold liquids.)
  • 1 whole Lemon (Juiced. Yields approximately 1.5 ounces of juice.)
  • 6 ounces Apollinaris mineral water (or club soda) (Or suitable carbonated water. Quantity estimated to fill glass.)
  • 1 serving Fresh fruit (lemon slices, cherries) (For garnish.)

Instructions

  1. 1Fill a large mixing glass approximately 2/3 full with fine or crushed ice.
  2. 2Add the tablespoon of sugar and the juice of one lemon to the ice. Fill the remainder of the glass with Apollinaris or your preferred carbonated water.
  3. 3Stir the mixture well to chill and combine. Strain the liquid into a lemonade glass or highball glass. Dress with fresh fruit slices and serve immediately.
