Ingredients
- 1.5 cups Rolled Oats (Use old-fashioned rolled oats, not instant.)
- 3 cups All-Purpose Flour (Plus more for dusting.)
- 2.25 teaspoons Active Dry Yeast (Or 1 packet.)
- 1.5 cups Warm Water (About 105-115°F.)
- 2 tablespoons Honey (Or maple syrup.)
- 1.5 teaspoons Salt (Sea salt or table salt.)
- 2 tablespoons Olive Oil (Plus more for greasing the bowl and pan.)

- 1In a large bowl, dissolve the yeast and honey in warm water. Let stand for 5-10 minutes, or until foamy.
- 2Add the rolled oats, salt, and olive oil to the yeast mixture. Gradually add the flour, mixing until a shaggy dough forms.
- 3Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Add more flour if the dough is too sticky.
- 4Grease a large bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- 5Punch down the dough to release the air. Turn the dough out onto a lightly floured surface and shape it into a loaf. Place the loaf in a greased 9x5 inch loaf pan.
- 6Cover the loaf pan with plastic wrap and let rise in a warm place for 30-45 minutes, or until the dough reaches the top of the pan.
- 7Preheat oven to 375°F (190°C). Bake for 35-40 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom. If the top is browning too quickly, tent with foil.
- 8Remove the loaf from the pan and let cool on a wire rack before slicing and serving.
