Instructions
- 1Pick over, wash, and soak prunes in 2 cups of cold water for at least 2 hours, or preferably overnight.
- 2Cook the prunes in the same water they soaked in until they are soft. This should take about 20-30 minutes.
- 3Remove prunes from the water. Pit the prunes and cut them into quarters.
- 4To the prune water, add enough boiling water to make 2 cups of liquid.
- 5Soak the gelatin in 1/2 cup of cold water for 5 minutes.
- 6Dissolve the soaked gelatin in the hot prune liquid. Stir until completely dissolved.
- 7Add the sugar and lemon juice to the gelatin mixture. Stir until the sugar is dissolved.
- 8Strain the mixture through a fine-mesh sieve to remove any undissolved gelatin. Add the quartered prunes to the strained liquid.
- 9Pour the mixture into a mold or individual serving dishes. Chill in the refrigerator for at least 4 hours, or until set.
- 10Stir twice while cooling to prevent prunes from settling. Serve chilled with sugar and cream, if desired.
