- 8 Bread slices (Thinly sliced)
- 2 tablespoons Butter (Softened)
- 4 ounces Cooked ham slices (Thinly sliced)
- 2 tablespoons Mayonnaise
- 1 tablespoon Capers (Finely chopped)
- 1 tablespoon Gherkins (Finely chopped)
- 1 tablespoon Fresh parsley (Finely chopped)
- 1 teaspoon Fresh tarragon (Finely chopped)
- 1 teaspoon Fresh chives (Finely chopped)
- 0.5 teaspoon Dijon mustard

Instructions
- 1Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let sit for 10 minutes. Drain and cool under cold running water. Peel the eggs.
- 2Remove sardines from the can and drain excess oil. Mash the sardines in a bowl. Peel the hard-boiled eggs and press them through a sieve or mash them finely with a fork. Add the mashed eggs to the sardines. Season with salt and cayenne pepper. Add lemon juice and olive oil (or melted butter) and mix well to form a paste.
- 3In a bowl, combine mayonnaise, finely chopped capers, finely chopped gherkins, finely chopped fresh parsley, finely chopped fresh tarragon, finely chopped fresh chives, and Dijon mustard. Mix well.
- 4Butter the bread slices. Spread the sardine mixture evenly between two slices of buttered bread. Cut in half and serve.

- 6Finely chop the remaining ham. Moisten the chopped ham with the prepared Sauce Tartare. Butter the bread slices. Spread the chopped ham mixture between two slices of buttered bread. Cut in half and serve.
