Ingredients

  • 1 cup Water
  • 2 cups Granulated Sugar
  • 1 cup Strong Brewed Tea (cooled) (Use your favorite tea, brewed strong and cooled.)
  • 1 quart Sparkling Water (e.g., San Pellegrino) (Original recipe calls for Apollinaris.)
  • 2 cups Strawberry Syrup (Can be store-bought or homemade.)
  • 0.625 cup Fresh Lemon Juice (Juice of approximately 5 lemons)
  • 0.625 cup Fresh Orange Juice (Juice of approximately 5 oranges)
  • 1 can (20 oz) Crushed Pineapple (Drained)
  • 1 cup Maraschino Cherries (With stems, for garnish)
  • 6 cups Ice Water (Approximately, to reach desired volume)

Instructions

  1. 1In a saucepan, combine water and sugar. Bring to a boil over medium heat, stirring until sugar is dissolved. Reduce heat and simmer for 10 minutes.
  2. 2Remove syrup from heat and let cool slightly. Add the cooled tea, strawberry syrup, lemon juice, orange juice, and drained crushed pineapple. Stir well to combine.
  3. 3Let the mixture stand for 30 minutes to allow the flavors to meld. Strain the mixture through a fine-mesh sieve or cheesecloth to remove the pineapple pulp.
  4. 4Add ice water to the strained mixture to make approximately 1.5 gallons (6 quarts) of liquid. Stir well. Chill in the refrigerator for at least 30 minutes before serving.
  5. 5Just before serving, add the maraschino cherries and sparkling water. Serve in a punch bowl with ice.
