Continue to cook, stirring frequently, until the mixture reaches the hard-crack stage (300-310°F or 149-154°C) on a candy thermometer. This will take approximately 15-20 minutes. Be careful not to burn the mixture.
- 4Once the mixture reaches the hard-crack stage, immediately pour it onto the prepared baking sheet. Let it cool completely without disturbing it. This will take about 10-15 minutes.
- 5Once the butterscotch is completely cool and hardened, break it into pieces. Store in an airtight container.
