Broiled Tomatoes

A simple recipe for broiled tomatoes, with variations for creamed and deviled tomatoes.

Ingredients

  • 4 Tomatoes (Medium size)
  • 2 tablespoons Butter (For broiling)
  • 0.25 teaspoon Salt (To taste)
  • 0.25 teaspoon Black pepper (To taste)
  • 1 tablespoon All-purpose flour (For Tomatoes à la Crême)
  • 1 cup White Sauce I (For Tomatoes à la Crême)

Instructions

  1. 1Preheat broiler. Wipe tomatoes and cut in halves crosswise. Cut off a thin slice from the rounded side so they sit flat.
  2. 2Place tomato halves in a well-buttered broiler pan. Broil six to eight minutes, or until lightly browned.
  3. 3Wipe, peel, and slice three tomatoes. Sprinkle with salt and pepper, dredge with flour, and sauté in butter. Place on a hot platter and pour over them one cup White Sauce I.
  4. 4Slice 3 tomatoes. Sprinkle with salt and pepper.
