Broiled Tomatoes
A simple recipe for broiled tomatoes, with variations for creamed and deviled tomatoes.
Ingredients
- 4 Tomatoes (Medium size)
- 2 tablespoons Butter (For broiling)
- 0.25 teaspoon Salt (To taste)
- 0.25 teaspoon Black pepper (To taste)
- 1 tablespoon All-purpose flour (For Tomatoes à la Crême)
- 1 cup White Sauce I (For Tomatoes à la Crême)
Instructions
- 1Preheat broiler. Wipe tomatoes and cut in halves crosswise. Cut off a thin slice from the rounded side so they sit flat.
- 2Place tomato halves in a well-buttered broiler pan. Broil six to eight minutes, or until lightly browned.
- 3Wipe, peel, and slice three tomatoes. Sprinkle with salt and pepper, dredge with flour, and sauté in butter. Place on a hot platter and pour over them one cup White Sauce I.
- 4Slice 3 tomatoes. Sprinkle with salt and pepper.
