Tomatoes Stuffed with Nuts and Celery

A refreshing salad featuring tomatoes filled with a mixture of nuts, celery, and mayonnaise, served on a bed of lettuce.

Ingredients

  • 4 medium Tomatoes
  • 1/2 cup English walnuts or pecan meats
  • 1/2 cup Celery
  • 1/4 cup Mayonnaise
  • 8 leaves Lettuce leaves

Instructions

  1. 1Peel the tomatoes. Cut out a circular piece at the stem end of each tomato and scoop out the flesh, leaving a cup-shaped shell.
  2. 2Place the prepared tomato cups in the refrigerator to chill thoroughly.
  3. 3Break the English walnut or pecan meats into pieces. Cut the celery into small pieces. In a bowl, mix the nuts and celery with mayonnaise.
  4. 4Fill the chilled tomato cups with the nut and celery mixture. Serve each stuffed tomato on a lettuce leaf.
