Tomatoes Stuffed with Nuts and Celery
A refreshing salad featuring tomatoes filled with a mixture of nuts, celery, and mayonnaise, served on a bed of lettuce.
Ingredients
- 4 medium Tomatoes
- 1/2 cup English walnuts or pecan meats
- 1/2 cup Celery
- 1/4 cup Mayonnaise
- 8 leaves Lettuce leaves
Instructions
- 1Peel the tomatoes. Cut out a circular piece at the stem end of each tomato and scoop out the flesh, leaving a cup-shaped shell.
- 2Place the prepared tomato cups in the refrigerator to chill thoroughly.
- 3Break the English walnut or pecan meats into pieces. Cut the celery into small pieces. In a bowl, mix the nuts and celery with mayonnaise.
- 4Fill the chilled tomato cups with the nut and celery mixture. Serve each stuffed tomato on a lettuce leaf.
