Tomatoes Stuffed with Cucumber
A refreshing salad of tomatoes filled with a cucumber mixture, served on lettuce leaves.
Ingredients
- 5 Tomatoes
- 1 Cucumber
- 1 cup Cream dressing

Instructions
- 1Peel the tomatoes. Cut off the stem ends and scoop out the pulp, creating tomato cups. Place the tomato cups upside down in a cool place to drain.
- 2Chop the tomato pulp and the cucumber. Chill the cucumber before chopping for best results. In a bowl, combine the chopped tomato pulp, cucumber, and cream dressing. Season with salt and pepper to taste. If desired, chop a pimento and add it to the mixture, or add the grated horseradish.
- 3Fill the prepared tomato cups with the cucumber mixture. Serve immediately on lettuce leaves.
