Oysters, No. 2
A classic oyster dish.
Ingredients
- 1 pint Oysters
- 1 teaspoon Salt
- 4 tablespoons Butter
- 1/4 teaspoon Cayenne pepper (Quantity estimated (not specified in original recipe))
- 1 tablespoon Lemon juice
- 2 large Eggs
- 4 slices Buttered toast or crackers (Quantity estimated (not specified in original recipe))
Instructions
- 1Place the oysters in a blazer (or a chafing dish). Allow them to heat until they look plump and the edges curl. This should take about 5 minutes.
- 2Place the blazer into a hot-water pan. Add the salt, butter, and cayenne pepper to the oysters. Cook for 5 minutes, stirring occasionally.
- 3In a small bowl, whisk the egg yolks. Add a few spoonfuls of the oyster liquor from the pan and mix well. Then, pour the egg mixture into the chafing dish.
- 4Stir the mixture constantly until the liquor thickens. Serve immediately on thin slices of buttered toast or thin crackers.
