Oysters, No. 2

A classic oyster dish.

Ingredients

  • 1 pint Oysters
  • 1 teaspoon Salt
  • 4 tablespoons Butter
  • 1/4 teaspoon Cayenne pepper (Quantity estimated (not specified in original recipe))
  • 1 tablespoon Lemon juice
  • 2 large Eggs
  • 4 slices Buttered toast or crackers (Quantity estimated (not specified in original recipe))

Instructions

  1. 1Place the oysters in a blazer (or a chafing dish). Allow them to heat until they look plump and the edges curl. This should take about 5 minutes.
  2. 2Place the blazer into a hot-water pan. Add the salt, butter, and cayenne pepper to the oysters. Cook for 5 minutes, stirring occasionally.
  3. 3In a small bowl, whisk the egg yolks. Add a few spoonfuls of the oyster liquor from the pan and mix well. Then, pour the egg mixture into the chafing dish.
  4. 4Stir the mixture constantly until the liquor thickens. Serve immediately on thin slices of buttered toast or thin crackers.
