Oyster Rarebit
A savory dish of oysters and cheese served on toast.
Ingredients
- 1/2 pint Oysters
- 1 tablespoon Butter
- 1/2 pound Cheese
- 1/4 teaspoon Salt
- 1/4 teaspoon Mustard
- 1/8 teaspoon Cayenne pepper (Quantity estimated (not specified in original recipe))
- 2 large Eggs
- 4 slices Toast (Quantity estimated (not specified in original recipe))
Instructions
- 1Clean and remove the hard muscles from the oysters. Parboil the oysters in a chafing-dish (or skillet) in their own liquor until their edges curl, about 3-5 minutes. Remove the oysters to a hot bowl.
- 2In the chafing-dish (or skillet), melt the butter. Add the cheese broken into small bits, salt, mustard, and cayenne pepper. Stir until the cheese is melted.
- 3While the cheese is melting, beat the eggs slightly. Add the oyster liquor to the eggs. Gradually mix the egg mixture with the melted cheese. Add the oysters and turn the mixture at once over hot toast.
