Claret Jelly for Sweet Sandwiches

A claret jelly recipe for sweet sandwiches, adapted from a historical recipe.

Ingredients

  • 2 ounces Gelatin
  • 1 cup Cold Water
  • 1 cup Boiling Water
  • 1 cup Sugar
  • 1 1/2 cups Claret (Originally orange juice. Substituted with claret as per the recipe instructions.)
  • 1/4 cup Lemon Juice

Instructions

  1. 1Soak the gelatin in the cold water for 5 minutes. Dissolve the softened gelatin in the boiling water.
  2. 2Add the sugar to the gelatin mixture and stir until dissolved. Strain the mixture to remove any undissolved particles. When cold, add the claret and lemon juice.
  3. 3Mould in sheets three-eighths of an inch thick. Refrigerate until set.
