Apple, Date-and-Celery Salad
A refreshing salad with apples, dates, and celery, dressed with homemade mayonnaise.
Ingredients
- 1 large Large apple
- 0.5 of a Lemon juice
- 5 stalks Celery stalks
- 0.5 pound Dates
- 0.5 cup Mayonnaise
- 2 Egg yolks (For mayonnaise dressing.)
- 1 pint Olive oil (For mayonnaise dressing.)
- 2 tablespoonfuls Vinegar (For mayonnaise dressing.)
- 2 tablespoonfuls Lemon juice (For mayonnaise dressing.)
- 0.5 teaspoonful Salt (For mayonnaise dressing.)
- a few grains Cayenne pepper or paprika (For mayonnaise dressing.)
- 1 teaspoonful Mustard (For mayonnaise dressing, if desired.)
- 1 teaspoonful Powdered sugar (For mayonnaise dressing, if desired.)
- 2 tablespoonfuls Boiling water (For mayonnaise dressing.)
Instructions
- 1Pare, quarter, and core the apple. Cut it into small pieces and squeeze the juice of half a lemon over them.
- 2Cut the celery stalks into small pieces.
- 3Pour boiling water over the dates. Stir the water through them. Let them dry in the oven. When cold, cut each date into four or five lengthwise pieces.
- 4Beat the egg yolks with a small wooden spoon or silver fork. Add the salt, cayenne or paprika, and mix again; then add all of the vinegar and lemon juice, beating it in gradually with an egg-beater. When the mixture is smooth, beat in half a teaspoonful of oil. Continue beating in the oil, increasing the quantity added at one time to a teaspoonful, and finally to a tablespoonful, until the whole quantity has been used. Lastly, beat in two tablespoonfuls of boiling water, one at a time. Cover with a china or glass plate and set aside in a cool place.
- 5Mix together the apple, celery, and dates. Add a generous half cup of mayonnaise dressing and mix again.
