To Fry Brook Trout or any other Small Fish
A simple recipe for frying small fish.
Ingredients
- as needed Brook trout or other small fish
- to taste Black pepper
- to taste Salt
- as needed Cornmeal
- 1/3 portion Butter
- 2/3 portion Vegetable shortening or neutral oil (Originally lard. Substituted with vegetable shortening or neutral oil for modern preference.)
Instructions
- 1Clean the fish. Wrap each fish individually in a clean, dry towel and let them rest for a few minutes.
- 2Season the fish with pepper and salt to taste.
- 3Roll the seasoned fish in cornmeal. Heat the butter and vegetable shortening (or oil) in a frying pan over medium-high heat. Fry the fish until golden brown and cooked through, about 5-7 minutes per side.
- 4Drain the fried fish on a sieve or paper towels and serve hot.
