Brook Trout Moulded in Aspic

Ingredients

Instructions
- 1Pour a small amount of chicken aspic into a pickle jar or other dish of a suitable shape and size for a single fish. Let it chill until nearly set.
- 2Carefully lay the prepared trout onto the partially set aspic. Add a few spoonfuls of aspic to the fish and let it harden, fixing the fish in place. Then, add enough aspic to completely cover the fish.
- 3Arrange slices of cucumber pickles, capers, or other desired ornaments around the fish. Chill the aspic thoroughly until completely set.
- 4Once the aspic is set, remove the trout from the mold. Serve on two lettuce leaves with any desired dressing.
