Instructions

  1. 1Pour a small amount of chicken aspic into a pickle jar or other dish of a suitable shape and size for a single fish. Let it chill until nearly set.
  2. 2Carefully lay the prepared trout onto the partially set aspic. Add a few spoonfuls of aspic to the fish and let it harden, fixing the fish in place. Then, add enough aspic to completely cover the fish.
  3. 3Arrange slices of cucumber pickles, capers, or other desired ornaments around the fish. Chill the aspic thoroughly until completely set.
  4. 4Once the aspic is set, remove the trout from the mold. Serve on two lettuce leaves with any desired dressing.
