Meringues

Classic meringue recipe.

Ingredients

  • 4 eggs Egg whites
  • 1/2 pound Powdered sugar (Finely powdered sugar is essential for the meringue's texture.)
  • 1 teaspoon Vanilla extract (Originally Royal Extract Vanilla. Substituted with vanilla extract.)
  • 1 teaspoon Lemon extract (Alternative flavoring to vanilla extract.)
  • as needed Jam, jelly, or cream (For filling the meringues.)

Instructions

  1. 1In a clean, dry bowl, whisk the egg whites until they form stiff peaks.
  2. 2Gradually add the powdered sugar to the whipped egg whites, whisking continuously until the mixture is glossy and holds stiff peaks. Add vanilla or lemon extract and whisk to combine.
  3. 3Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Spoon or pipe the meringue mixture onto the prepared baking sheet, shaping them into half-egg shapes, about 1/2 inch apart.
  4. 4Place the baking sheet in the preheated oven. Bake for 15-20 minutes, or until the meringues are lightly golden and crisp. Do not close the oven completely during baking.
  5. 5Remove the meringues from the oven and let them cool on the baking sheet for a few minutes. Carefully remove the meringues from the parchment paper. Fill the shells with jam, jelly, or cream, and join two halves together.
