Meringues
Classic meringue recipe.
Ingredients
- 4 eggs Egg whites
- 1/2 pound Powdered sugar (Finely powdered sugar is essential for the meringue's texture.)
- 1 teaspoon Vanilla extract (Originally Royal Extract Vanilla. Substituted with vanilla extract.)
- 1 teaspoon Lemon extract (Alternative flavoring to vanilla extract.)
- as needed Jam, jelly, or cream (For filling the meringues.)
Instructions
- 1In a clean, dry bowl, whisk the egg whites until they form stiff peaks.
- 2Gradually add the powdered sugar to the whipped egg whites, whisking continuously until the mixture is glossy and holds stiff peaks. Add vanilla or lemon extract and whisk to combine.
- 3Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Spoon or pipe the meringue mixture onto the prepared baking sheet, shaping them into half-egg shapes, about 1/2 inch apart.
- 4Place the baking sheet in the preheated oven. Bake for 15-20 minutes, or until the meringues are lightly golden and crisp. Do not close the oven completely during baking.
- 5Remove the meringues from the oven and let them cool on the baking sheet for a few minutes. Carefully remove the meringues from the parchment paper. Fill the shells with jam, jelly, or cream, and join two halves together.
