Mayonnaise Sauce

Ingredients
- 2 units Raw egg yolks
- 2 saltspoonfuls Salt
- 1/2 saltspoonful Cayenne pepper
- 1 saltspoonful Dry mustard
- 1 teaspoonful Salad oil (e.g., canola or vegetable oil)
- 1/2 unit Lemon juice
- 1/2 pint Salad oil (e.g., canola or vegetable oil)
- 2 units Lemon juice

Instructions
- 1In a bowl, work the yolks of 2 raw eggs to a smooth paste. Add 2 saltspoonfuls salt, 1/2 saltspoonful cayenne pepper, 1 saltspoonful dry mustard, and 1 teaspoonful salad oil. Mix these ingredients thoroughly.
- 2Add the strained juice of 1/2 a lemon and mix well.
- 3Gradually add the remaining 1/2 pint of salad oil, a teaspoonful at a time, whisking constantly. Every fifth teaspoonful, add a few drops of lemon juice. Continue until all the oil and lemon juice are incorporated.
