Hominy Griddle Cakes

A recipe for Hominy Griddle Cakes, based on Rice Griddle Cakes, served with maple syrup.

Ingredients

  • 2 cupfuls Cold boiled rice
  • 1 pint Flour
  • 1 teaspoonful Sugar
  • 1/2 teaspoonful Salt
  • 1 1/2 teaspoonfuls Baking powder
  • 1 each Egg
  • 1/2 pint Milk
  • to taste Maple syrup

Instructions

  1. 1Sift together flour, sugar, salt, and baking powder. Add cold boiled rice, free from lumps. Dilute with beaten egg and milk. Mix into a smooth batter.
  2. 2Heat a griddle over medium heat. Pour 1/4 cup of batter onto the hot griddle for each cake. Cook until golden brown, about 2-3 minutes per side.
  3. 3Serve the griddle cakes immediately with maple syrup.
