Delicious Little Cakes
These are small cakes with a rich jumble paste edge, filled with iced fruit.
Ingredients
- as needed Rich jumble paste (For the cake base and edges)
- as needed Rich, ripe peaches ((Canned, well-drained))
- as needed Plums
- as needed Strawberries
- as needed Pineapples
- 1 as needed Egg white (Slightly beaten)
- as needed Pulverized sugar (For coating the fruit)
Instructions
- 1Make a rich jumble paste. Roll it out to your desired shape for the base of the cakes. Cut some paste into thick, narrow strips and lay them around the edges of the cake bases to form a deep, cup-like edge.
- 2Place the cakes on a well-buttered tin. Preheat oven to 350°F (175°C) and bake for 25-30 minutes, or until the paste is golden brown.
- 3Take rich, ripe peaches (canned ones will do if fine and well drained from all juice), cut in halves. Cut plums, strawberries, and pineapples into squares or small triangles. Dip each piece of fruit in the slightly beaten egg white and then in pulverized sugar.
- 4Lay the iced fruit in the center of your baked cakes.
