Celery Minced with Egg Dressing

A refreshing salad featuring celery and a simple egg dressing.

Ingredients

  • 1 bunch Celery
  • 2 large Eggs
  • 1 tablespoonful Salad oil
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper
  • 1/4 teaspoon Powdered sugar
  • 1 tablespoon Vinegar

Instructions

  1. 1Scrape and wash the celery. Cut into 1/2 inch lengths. Crisp the celery in cold water for about 10 minutes.
  2. 2Boil the eggs until hard-boiled. Remove the yolks and rub them to a paste. Add the salad oil, salt, pepper, powdered sugar, and vinegar. Mix until the mixture is liquid.
  3. 3Pour the egg dressing over the celery. Serve immediately in a salad bowl.
