Ingredients

  • 3 tablespoons Butter
  • 1/2 teaspoon Salt
  • 4 tablespoons All-purpose flour
  • 1/8 teaspoon Paprika
  • 1 cup Milk
  • 1/2 pint Oysters
  • 4 shells Patty shells (Quantity estimated (not specified in original recipe))

Instructions

  1. 1Clean the oysters by removing any shell fragments and drain off the liquor. Set aside.
  2. 2Melt the butter in a saucepan over medium heat. Add the flour and salt, and whisk thoroughly to create a roux. Gradually whisk in the milk, stirring constantly to prevent lumps. Cook, stirring frequently, until the sauce thickens, about 5-7 minutes.
  3. 3Place the oysters in a pan and heat for about 1 minute. This will "plump" them. Do not overcook.
  4. 4Add the plumped oysters to the white sauce and stir gently to combine. Serve immediately in patty shells that have been warmed in a hot oven (400°F / 200°C) for a few minutes.
