Ingredients
- 3 tablespoons Butter
- 1/2 teaspoon Salt
- 4 tablespoons All-purpose flour
- 1/8 teaspoon Paprika
- 1 cup Milk
- 1/2 pint Oysters
- 4 shells Patty shells (Quantity estimated (not specified in original recipe))
Instructions
- 1Clean the oysters by removing any shell fragments and drain off the liquor. Set aside.
- 2Melt the butter in a saucepan over medium heat. Add the flour and salt, and whisk thoroughly to create a roux. Gradually whisk in the milk, stirring constantly to prevent lumps. Cook, stirring frequently, until the sauce thickens, about 5-7 minutes.
- 3Place the oysters in a pan and heat for about 1 minute. This will "plump" them. Do not overcook.
- 4Add the plumped oysters to the white sauce and stir gently to combine. Serve immediately in patty shells that have been warmed in a hot oven (400°F / 200°C) for a few minutes.
