Orange Tapioca (Two portions)

This refreshing Orange Tapioca is a delightful dessert, perfect for a light and satisfying treat. Ingredients

  • 4 tablespoons Orange juice
  • 2 teaspoons Lemon juice
  • 5 tablespoons Sugar
  • 2/3 cup Boiling water
  • 2 tablespoons Powdered tapioca
  • 1/4 teaspoon Salt
  • 1 piece Orange
  • 1/2 cup Heavy cream
  • 1 teaspoon Sugar
  • 1/4 teaspoon Vanilla extract
  • 3 drops Lemon extract

Instructions

  1. 1In a bowl, stir the powdered tapioca into the orange and lemon juice. Add the sugar and salt. Let the mixture stand for 3 minutes.
  2. 2While the tapioca mixture is standing, bring the water to a boil. Add the boiling water to the tapioca mixture. Place directly over the heat and stir constantly. Cook until the mixture thickens, about 3 minutes.
  3. 3Peel the orange and break it apart into sections. Line a glass serving dish with the orange sections and pour the cooked tapioca over them. Serve cold with whipped cream.
  4. 4Beat the heavy cream until thick. Add the sugar, vanilla extract, and lemon extract. Place in a cool place until ready to serve.
