Honolulu Salad
This refreshing Honolulu Salad offers a delightful combination of sweet and savory flavors, perfect for a light lunch or a sophisticated appetizer. The recipe features the tropical sweetness of pineapple, complemented by creamy cottage cheese and a tangy homemade salad dressing. Ingredients
- 6 slices Canned pineapple slices
- 1/4 teaspoon Salt
- 1/2 cup Cottage cheese
- 6 halves Nut meat halves (walnuts or pecans)
- 1 tablespoon Chopped pimento
- 6 pieces Lettuce leaves
- 1 teaspoon Chopped green pepper
- 6 tablespoons Salad dressing
- 4 Egg yolks
- 1 teaspoon Mustard
- 1/2 cup Vinegar
- 4 tablespoons Sugar
- 1/2 cup Water
- 1/4 teaspoon Paprika
- 1 teaspoon Salt
- 2 tablespoons Flour
Instructions
- 1In a bowl, combine the cottage cheese, chopped pimento, chopped green pepper, and salt. Mix well until everything is evenly distributed.
- 2Shape the cottage cheese mixture into balls, each about one inch in diameter.
- 3Arrange a slice of pineapple on each piece of lettuce. Place a cheese ball in the center of each pineapple slice. Top each cheese ball with a nut meat half.
- 4In a bowl, beat the egg yolks. Add the vinegar. In a separate bowl, mix the salt, mustard, sugar, paprika, and flour thoroughly. Slowly add the water to the dry ingredients, taking care not to let the mixture get lumpy. Pour the water mixture into the egg yolks and vinegar. Cook slowly, stirring constantly until the dressing thickens and becomes creamy.
