Filling
This classic filling recipe, perfect for cakes, offers a rich and creamy texture with a delicate vanilla flavor. The combination of sugar, flour, and milk creates a smooth base, while the egg yolk adds richness. This filling is a delightful addition to any cake, providing a satisfying and elegant touch.
Ingredients
- 7 tablespoons Granulated sugar
- 1 each Egg yolk
- 3 tablespoons All-purpose flour
- 1 cup Whole milk
- 1/8 teaspoon Salt
- 1/2 teaspoon Vanilla extract
- 2 each Egg whites
- 1/2 teaspoon Lemon extract
- 5 tablespoons Powdered sugar (Powdered sugar preferred.)
Instructions
- 1In a saucepan, whisk together the sugar, flour, and salt. In a separate bowl, beat the egg yolk. Gradually add the beaten egg yolk and milk to the dry ingredients, stirring constantly to combine. Cook over a double boiler for 10 minutes, stirring occasionally to prevent lumps. Remove from heat and stir in the vanilla extract. Let cool partially.
- 2Spread part of the filling over one layer of the cake. Let stand for 5 minutes, then add more filling. Allow to stand for 2 minutes. Place the other layer on top.
- 3In a clean bowl, beat the egg whites until stiff. Add the powdered sugar and lemon extract, beating for about a minute until combined.
- 4Pile the meringue lightly on top of the filling. Bake in a moderate oven at 350°F (175°C) until the meringue turns golden brown, about 15 minutes.
