Corn Starch Fruit Pudding

Ingredients
- 1/2 cup Water
- 1/2 cup Cherry juice
- 3 tablespoons Corn starch
- 1/8 teaspoon Salt
- 3 tablespoons Sugar
- 1 large Egg yolk
- 1 large Egg white
- 1/2 cup Cherry juice
- 1/2 cup Water
- 1 tablespoon All-purpose flour
- 1/2 teaspoon Lemon extract
- 1/8 teaspoon Salt
- 2 tablespoons Sugar
- 1/4 cup Fresh cherries, finely chopped
Instructions
- 1In a saucepan, mix thoroughly the corn starch, sugar, and salt.
- 2Gradually add the cold water and then the cherry juice to the corn starch mixture, stirring constantly. Cook over low heat, stirring continuously, until the mixture becomes quite thick, about 5-7 minutes.
- 3Remove from heat and add the egg yolk, mixing well. Allow to cool slightly.
- 4In a separate bowl, beat the egg white until stiff peaks form. Gently fold the beaten egg white into the cooled cornstarch mixture. Pour the mixture into a well-moistened custard mold. Allow to stand in the refrigerator for at least half an hour or more to set.
- 5In a saucepan, mix the flour, salt, and sugar. Add the cherry juice and water slowly, stirring to combine. Cook over medium heat for about 2 minutes, or until the sauce thickens slightly. Stir in the chopped cherries and lemon extract.
