Apple and Mint Jelly

This refreshing Apple and Mint Jelly offers a unique twist on a classic preserve, combining the crispness of apples with the cool, herbaceous notes of fresh mint. The jelly-making process transforms simple ingredients into a vibrant, flavorful spread, perfect for elevating toast, scones, or even pairing with savory dishes. The result is a delightful balance of sweet and refreshing flavors.

Ingredients

  • 4 pounds Greening apples
  • 1 cup Fresh mint, chopped
  • 3/4 cup Granulated sugar (Quantity estimated (not specified in original recipe))

Instructions

  1. 1Wash and cut the greening apples into small pieces. Wash and finely chop the fresh mint.
  2. 2Combine the chopped apples and mint in a large pot. Cover the mixture with water. Cook over medium heat until the apples are very tender and falling apart, about 45 minutes.
  3. 3Strain the cooked apple mixture through a fine-mesh sieve or cheesecloth, reserving the juice. For each cup of juice, add 3/4 cup of granulated sugar.
  4. 4Cook the juice and sugar mixture over medium heat until it reaches the gelling point. This can be tested by placing a small amount of the mixture on a chilled plate; it should wrinkle when pushed with a finger. Alternatively, use a candy thermometer and cook to 220°F (104°C).
