Ingredients
- 4 pounds Greening apples
- 1 cup Fresh mint, chopped
- 3/4 cup Granulated sugar (Quantity estimated (not specified in original recipe))
Instructions
- 1Wash and cut the greening apples into small pieces. Wash and finely chop the fresh mint.
- 2Combine the chopped apples and mint in a large pot. Cover the mixture with water. Cook over medium heat until the apples are very tender and falling apart, about 45 minutes.
- 3Strain the cooked apple mixture through a fine-mesh sieve or cheesecloth, reserving the juice. For each cup of juice, add 3/4 cup of granulated sugar.
- 4Cook the juice and sugar mixture over medium heat until it reaches the gelling point. This can be tested by placing a small amount of the mixture on a chilled plate; it should wrinkle when pushed with a finger. Alternatively, use a candy thermometer and cook to 220°F (104°C).
