Sabudaana Kheer (Sago Kheer)
Sabudaana kheer is a creamy, thick, and delicious Indian pudding, often prepared during fasting. It combines tapioca pearls with milk, sugar, and aromatic spices for a rich dessert.

- 0.5 cup Sabudana (tapioca pearls)
- 2 cups Whole Milk
- 0.5 cup Sugar
- 0.5 teaspoon Green Cardamom Powder
- 1.5 cups Water
- 6 strands Kesar (Saffron)
- 5 count Almonds (Soaked and finely sliced)

Instructions
- 1Soak the sabudana in water for 30 minutes. After soaking, cook it with 1.5 cups of water, stirring continuously.
- 2Continue cooking the sabudana until the pearls become transparent and soft, indicating they are well-cooked.
- 3Pour 2 cups of milk into the pot with the cooked sabudana. Cook until the mixture thickens and becomes starchy.
- 4Add 1/2 cup of sugar to the kheer and cook for an additional 2 minutes.
- 5Allow the kheer to thicken further, ensuring it remains pourable. Turn off the heat once the desired consistency is achieved.
- 6Stir in the cardamom powder and saffron strands. For added richness, incorporate finely sliced almonds.
- 7The kheer is ready to be served. It can be enjoyed either chilled or warm.
