Kaachiya Moru (Buttermilk)

Kaachiya moru is a traditional Kerala dish known for its digestive benefits. It is a spiced buttermilk preparation that is gently warmed to enhance flavors without curdling.

Ingredients

  • 5 cups Curd (Can use plain yogurt as a substitute)
  • 1.5 cups Water (Adjust as needed for desired buttermilk consistency)
  • 1 unit Green chillies (Small size, adjust for spice level)
  • 1 sprig Curry leaves
  • 6 units Garlic flakes
  • 1.5 teaspoons Turmeric
  • 1 teaspoon Salt (Adjust to taste)
  • 0.5 teaspoon Cumin seeds
  • 0.5 inch Ginger (Fresh ginger, finely chopped)

Instructions

  1. 1Grind the green chillies, curry leaves, garlic flakes, turmeric, salt, cumin seeds, and ginger with 2 tablespoons of curd to form a smooth paste.
  2. 2Add the remaining curd to the spice paste and blend until smooth. Gradually add water to achieve the desired buttermilk consistency, blending briefly to combine.
  3. 3Transfer the buttermilk mixture to a saucepan and gently heat over low flame. Stir continuously and remove from heat when it is slightly warm to prevent curdling.
  4. 4Pour the warmed buttermilk through a strainer into a serving jug. Serve immediately.
