Kuzhi Paniyaram | Paddu

A traditional South Indian breakfast dish made with dosa batter, spices, and herbs, cooked in a special pan to create soft and fluffy paniyarams.

Ingredients

  • 3 cups Dosa Batter
  • 0.5 teaspoon Split urad dal
  • 1 sprig Curry leaves
  • 5 teaspoons Oil
  • 0.5 teaspoon Mustard seeds
  • 0.5 unit/count Onions, finely chopped (Finely chopped)
  • 0.5 teaspoon Salt
  • 4 unit/count Green chillies

Instructions

  1. 1Heat a pan with oil over medium heat. Once the oil is hot, add mustard seeds and allow them to crackle. Add the split urad dal and roast until golden brown. Incorporate the finely chopped green chillies and curry leaves, stirring briefly.
  2. 2Finely chop half an onion and add it to the dosa batter along with the prepared tempering. Add salt and mix thoroughly to combine all ingredients evenly.
  3. 3Heat a kuzhipaniyaram pan and add a few drops of oil into each mold. Once the pan is hot, fill each mold with the batter up to three-quarters full. Partially cover and cook for 1-2 minutes until the bottom is golden brown. Flip each paniyaram using a wooden spoon or chopstick and cook the other side until done.
  4. 4Remove the paniyarams from the pan and serve hot with a chutney of your choice.
