Banana Bread

A perfect Tea Time Snack.

Ingredients

  • 2 cups All purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.5 cup Oil
  • 0.125 cup Plain yogurt
  • 1 cup Sugar
  • 2 units Eggs
  • 0.75 cup Walnuts (Chopped)
  • 3 units Bananas (Large, ripe and mashed)

Instructions

  1. 1Preheat the oven to 350°F (175°C). Spray a loaf pan with nonstick spray and set aside. In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  2. 2In a separate bowl, mix together the oil and sugar using a spatula until smooth and free of lumps.
  3. 3Add the eggs to the oil and sugar mixture, mixing until fully incorporated. Mash the ripe bananas and add them to the mixture, whisking thoroughly.
  4. 4Add the plain yogurt to the banana mixture and mix well. Gradually incorporate the dry ingredients, mixing until just combined and no flour pockets remain. Avoid overmixing.
  5. 5Gently fold in the chopped walnuts. Transfer the batter into the prepared loaf pan.
  6. 6Bake the bread in the preheated oven at 350°F (175°C) for approximately 65 minutes, or until a toothpick inserted into the center comes out clean.
  7. 7Allow the bread to cool on a wire rack before slicing and serving.
