Tindora Fry
A simple and flavorful Indian side dish featuring tindora (ivy gourd) stir-fried with spices and garnished with cilantro.
Ingredients
- 4 cups Tindora, sliced lengthwise (Long slices)
- 1 teaspoon Turmeric
- 2 teaspoons Red chilli powder
- 1 teaspoon Jeera powder
- 2 teaspoons Coriander powder
- 1 teaspoon Mustard seeds
- 1 sprig Curry leaves
- 2 tablespoons Oil
- 1 handful Cilantro, finely chopped (Finely chopped)
- 1 pinch Salt (Adjust to taste)
- 1 cup Water (For boiling)

Instructions
- 1Slice the tindora lengthwise into thin pieces. Alternatively, use frozen sliced tindora.
- 2Bring a cup of water to a boil in a vessel. Add the sliced tindora and a pinch of salt. Boil until the tindora is half-cooked, then drain and set aside.
- 3Heat oil in a pan over medium heat. Add mustard seeds and allow them to splutter. Add curry leaves and the half-cooked tindora.
- 4Add turmeric, red chilli powder, jeera powder, and coriander powder to the pan. Mix well and fry for a few minutes until the tindora is fully cooked. Adjust salt as needed.
- 5Garnish the tindora fry with finely chopped cilantro. Serve hot with rice or roti.
