Tindora Fry

A simple and flavorful Indian side dish featuring tindora (ivy gourd) stir-fried with spices and garnished with cilantro.

Ingredients

  • 4 cups Tindora, sliced lengthwise (Long slices)
  • 1 teaspoon Turmeric
  • 2 teaspoons Red chilli powder
  • 1 teaspoon Jeera powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Mustard seeds
  • 1 sprig Curry leaves
  • 2 tablespoons Oil
  • 1 handful Cilantro, finely chopped (Finely chopped)
  • 1 pinch Salt (Adjust to taste)
  • 1 cup Water (For boiling)

Instructions

  1. 1Slice the tindora lengthwise into thin pieces. Alternatively, use frozen sliced tindora.
  2. 2Bring a cup of water to a boil in a vessel. Add the sliced tindora and a pinch of salt. Boil until the tindora is half-cooked, then drain and set aside.
  3. 3Heat oil in a pan over medium heat. Add mustard seeds and allow them to splutter. Add curry leaves and the half-cooked tindora.
  4. 4Add turmeric, red chilli powder, jeera powder, and coriander powder to the pan. Mix well and fry for a few minutes until the tindora is fully cooked. Adjust salt as needed.
  5. 5Garnish the tindora fry with finely chopped cilantro. Serve hot with rice or roti.
