Tindora Airfry + Sauté
Tindora, also known as ivy gourd, is first air-fried and then sautéed with garlic, green chillies, and curry leaves for a flavorful side dish.
Ingredients
- 4 units Garlic cloves
- 4 units Green chillies
- 4 units Curry leaves
- 1 pinch Mustard seeds
- 1 pinch Cumin seeds
- 1 handful Cilantro
- 1 pinch Salt
- 12 oz Tindora (ivy gourd) (or around 1.5 cups)
- 1 tsp Turmeric
- 1 tsp Coriander powder
- 1 tsp Cumin powder
- 2 tsp Red chilli powder (You can reduce this to lower the spice level.)
- 1 tsp Oil

Instructions
- 1Preheat the air fryer to 375°F for 15 minutes. Combine all ingredients listed under 'For Airfry' and place them in the air fryer once preheated.
- 2Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds, allowing them to sizzle and pop.
- 3Add the garlic, green chillies, and curry leaves to the pan. Sauté until the garlic turns golden brown.
- 4Add the air-fried tindora to the pan. Mix well and let it cook for an additional 5 minutes.
- 5Garnish the dish with a handful of cilantro before serving.
