Beans Sabzi
A flavorful Indian side dish featuring green beans cooked with onions, garlic, and spices, perfect as an accompaniment to rice or roti.
Ingredients
- 5 cups Green beans, sliced (Sliced diagonally)
- 1 unit Onions, thinly sliced (Sliced thinly)
- 3 units Garlic cloves, finely chopped (Finely chopped)
- 1 teaspoon Turmeric
- 2 teaspoons Red chili powder
- 2 teaspoons Salt (Adjust to taste)
- 1 teaspoon Mustard seeds
- 2 tablespoons Oil (For frying)
- 4 cups Water (For boiling beans)

Instructions
- 1Slice the green beans diagonally for optimal flavor. Finely chop the garlic cloves and thinly slice the onion.
- 2In a vessel, bring water to a boil. Add the sliced beans, one chopped garlic clove, and a pinch of salt. Boil until the beans are about 80% cooked.
- 3Heat oil in a flat pan over medium heat. Add mustard seeds and allow them to splutter. Add the remaining chopped garlic and sauté until it turns light golden.
- 4Add the sliced onions to the pan and cook until they become translucent.
- 5Drain the beans and garlic mixture. Add it to the pan with the onions and mix well.
- 6Sprinkle turmeric and red chili powder over the beans. Adjust salt to taste and continue to fry until the beans reach your desired consistency.
- 7Remove from heat and serve hot as a side dish with rice or roti.
