Biriyani Masala Powder
The best homemade masala powder for your favorite Biriyani.
Ingredients
- 2 tbsp Fennel seeds
- 1 tsp Cumin seeds
- 1 tsp Black cumin (kalonji or fennel flower)
- 1 tsp Black peppercorns
- 2 unit/count Star anise
- 3 unit/count Green cardamom pods
- 4 unit/count Cinnamon stick (Medium sized)
- 1 unit/count Nutmeg
- 1 tsp Coriander powder
- 2 unit/count Dry red chillies
- 2 unit/count Cloves
- 2 unit/count Bay leaves
Instructions
- 1Place a pan over low heat. Add the fennel seeds, cumin seeds, black cumin, black peppercorns, star anise, green cardamom pods, cinnamon stick, nutmeg, coriander powder, dry red chillies, cloves, and bay leaves. Dry roast them until they are fragrant.
- 2Transfer the roasted spices to a mixer grinder. Grind them into a fine powder.
- 3Store the freshly ground masala powder in an airtight container. Use it as needed for Biriyani.
