Peanut Chutney

A versatile side dish perfect for complementing South Indian breakfasts and tiffins.

Ingredients

  • 0.5 cup Peanuts
  • 6 units Green chillies (Chopped)
  • 0.25 cup Roasted Bengal gram
  • 2 tablespoons Oil (Divided)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 1 teaspoon Split urad dal
  • 4 units Dry red chillies
  • 0.5 sprig Curry leaves

Instructions

  1. 1In a pan, heat 1 tablespoon of oil over medium heat. Add the peanuts and fry until they lose their raw aroma and change color. Transfer the peanuts to a mixer jar.
  2. 2In the same pan and oil, add the chopped green chillies and fry briefly. Transfer them to the mixer jar with the peanuts.
  3. 3Add the roasted Bengal gram and salt to the mixer jar. Grind all ingredients into a fine paste, adding water as needed to achieve the desired consistency.
  4. 4In a tempering pan, heat the remaining tablespoon of oil. Add the split urad dal and fry for a minute. Then add mustard seeds, cumin seeds, curry leaves, and dry red chillies. Fry until the seeds splutter and the chillies darken slightly. Pour the tempering over the ground chutney and mix well.
