Green Chaaru

Ingredients
- 1 tbsp Oil
- 0.5 tsp Mustard seeds
- 2.5 tsp Cumin seeds
- 4 units Dried red chilli
- 0.25 tsp Turmeric
- 1.5 units Tomatoes (Medium sized, chopped)
- 1 spring Curry leaves
- 1.5 tsp Salt (Adjust to taste)
- 2 tbsp Coriander leaves
- 10 gms Tamarind (raw) (Approx. 1 small lemon sized)
- 1.25 cups Water
- 3 tsp Coriander seeds
- 0.25 tsp Black peppercorns
- 5.5 units Garlic cloves
- 0.25 cup Toor Dal

Instructions
- 1In a dry mixer grinder, combine coriander seeds, cumin seeds, and black peppercorns. Grind them into a fine powder. Add the garlic cloves and grind again until smooth.
- 2In a pan, heat the oil over medium heat. Add mustard seeds, cumin seeds, dried red chillies, and curry leaves. Sauté for about 30 seconds until the spices are fragrant.
- 3Add the prepared ground masala to the pan and sauté for 1 minute on low flame to enhance the flavors.
- 4Add the chopped tomatoes and salt to the pan. Cook until the tomatoes soften. Then, add water and tamarind, bringing the mixture to a boil. Garnish with coriander leaves before serving.
