Ingredients
- 500 grams Refined flour (If you want it to be a bit healthier then you can add wheat flour as well.)
- 1 cup Water (Make sure the water is hot.)
- 3 tablespoons Oil (It will go in the dough.)
- 1 teaspoon Nigella Seeds
- 1.5 teaspoons Salt
- 500 grams Oil (For frying.)
- 0 to taste Chaat Masala (Optional, for sprinkling.)
- 0 optional Curry Leaves (For added flavor.)
Instructions
- 1In a large mixing bowl, combine the refined flour, salt, nigella seeds, and 3 tablespoons of oil. Mix thoroughly. Gradually add boiling hot water and knead into a tight dough. Allow the dough to rest for 15-20 minutes.
- 2Flatten the rested dough on a clean surface and roll it out evenly. Cut the dough into desired shapes, such as diamonds or kaju.
- 3Heat oil in a deep frying pan over medium heat. Deep fry the shaped dough pieces until they are golden brown and crispy. Optionally, sprinkle with chaat masala after frying.
- 4For a crispier texture, you may add curry leaves to the oil while frying. Ensure the dough is rolled thinner than usual for best results. Note: Nimki with curry leaves pairs well with refined flour.
