Manni/Almond Pudding
Rich almond and sesame pudding.
Ingredients
- 500 grams Jeera rice (You can use any other aromatic rice if this is not available. Soak it overnight.)
- 500 grams Sesame seeds (Soak it separately overnight.)
- 500 grams Almonds (Soak it for at least 4 hours and peel it.)
- 100 grams Ghee
- 200 grams Sugar (Adjust according to your preference.)
- 100 grams Dry fruits (Chopped dry fruits like almonds, raisins for garnishing. You can skip this part if you wish.)
- 8 units Elaichi (Peel it.)
- 1 glass Cow milk (Add in the last 5 minutes of cooking.)

Instructions
- 1Soak the rice, sesame seeds, and almonds separately overnight. Remove the outer skin of the elaichi and retain only the greenish-black seeds.
- 2Remove the outer skin of the almonds and elaichi seeds. Place them in a grinder and powder them. Then, add the soaked rice and grind to a smooth paste. Set aside.
- 3Grind the sesame seeds separately to a fine paste. Strain using a muslin cloth or strainer to separate the fiber.
- 4Combine both mixtures and place on the stove. Stir continuously to prevent sticking. Cook for at least 30 minutes.
- 5In the last 5 minutes of cooking, add 1 glass of cow milk. Once cooked, add sugar and continue cooking for an additional 5 minutes.
- 6Add ghee on top of the mixture and mix well.
- 7Transfer the pudding to small bowls or a dessert tray. Garnish with chopped dry fruits such as almonds and raisins. Serve your Manni.
