Idlies
A traditional Indian breakfast dish made from fermented rice and urad dal batter, steamed to perfection.
Ingredients
- 3 cups White rice
- 2 cups Split urad dal
- 0.5 teaspoon Salt
- 1 cup Water (For steaming)

Instructions
- 1In separate vessels, soak the white rice and split urad dal in water for 5 to 6 hours.
- 2Using a mixer grinder, grind the soaked urad dal first, followed by the rice, until smooth. Combine both batters in a large vessel, add salt, and mix thoroughly. Allow the batter to ferment for 12 hours, depending on the ambient temperature.
- 3Pour the fermented batter into the idli molds. Add 1 cup of water to the cooker vessel, place the idli vessel inside, and steam for 7 to 10 minutes until the idlies are cooked through.
- 4Remove the idlies from the molds and serve hot with sambar or chutney.
