Muda Kadambu
This is a delicious snack recipe from the Malabar area of Kerala, mainly prepared with ripe jackfruit.
Ingredients
- 3 cups Rice flour
- 2 cups Jaggery
- 2 cups Jackfruit, ripe (Cut into small pieces)
- 1 cup Coconut pieces
- 2 bunches Banana leaves (For wrapping)
- 4 tablespoons Ghee
- 0.5 cup Water (For cooking jackfruit)
- 0.5 teaspoon Salt (To taste)
Instructions
- 1Cut the ripe jackfruit into small pieces. Add half a cup of water and salt, then cook in a pressure cooker for 2 whistles.
- 2Once cooled, transfer the cooked jackfruit to another vessel and grind it into a smooth paste using a mixer.
- 3Place the ground jackfruit in a vessel, add coconut pieces and jaggery syrup. Heat on a stove over low flame, stirring continuously until it thickens into a syrup.
- 4Add rice flour to the thick syrup and mix well to form a dough. Shape the dough into oval forms.
- 5Wrap each dough piece in a banana leaf. Steam in an idli cooker for 20 minutes.
