Puttu Kadala
This recipe is a very popular Kerala dish. It can be made only in a special puttu vessel. Now let me start with the recipe.
Ingredients
- 0.75 cup Rice flour (This is premium rice powder known as Puttu podi by product name Nirapara puttu podi.)
- 0.25 cup Water (Water should be warm, not hot.)
- 0.25 teaspoon Salt
- 1 as needed Scraped coconut (Used for layering in the puttu vessel.)
Instructions
- 1Sprinkle warm water over the Nirapara rice flour. Add salt and mix lightly with your hands. Allow the mixture to soak for 15-20 minutes, ensuring the rice flour is just moistened and not soaked.
- 2Fill the bottom vessel of the puttu maker halfway with water and place it on the stove to bring to a boil.
- 3Place a layer of scraped coconut at the bottom of the tube section of the puttu vessel, followed by a layer of the rice flour mixture. Repeat the layers, ensuring the top and bottom layers are coconut. Secure the tube with a lid.
- 4Attach the tube section to the bottom vessel with boiling water and steam for 10-15 minutes until the puttu is cooked through.
- 5Remove the puttu from the vessel and serve hot with kadala curry, banana, or sugar as desired.
