Roasted Gram Chutney
Roasted Gram Chutney is a popular South Indian chutney, typically served with dosa and idli. It is prepared with minimal ingredients and offers a delightful taste.
Ingredients
- 3 tbsp Roasted gram
- 4 tbsp Coconut, grated
- 5 units Dry red chillies (3 for grinding, 2 for seasoning)
- 4 units Shallots
- 1 sprig Curry leaves
- 2 tbsp Curd (Can substitute with plain yogurt)
- 2 pinches Sugar
- 1 tbsp Sunflower oil
- 0.25 tsp Mustard seeds
- 1 to taste Salt
- 0.5 cup Water (Adjust for desired consistency)
Instructions
- 1Fry the roasted gram, coriander seeds, and 3 dry red chillies separately until aromatic. Set aside. Slightly roast the shallots, grated coconut, and curry leaves until the raw aroma dissipates.
- 2In a mixer grinder, combine the roasted gram, coriander seeds, red chillies, shallots, coconut, curry leaves, salt, sugar, and water. Grind to a fine paste. Add curd and grind again until smooth.
- 3In a small pan, heat sunflower oil and add mustard seeds. Once they splutter, add curry leaves and 2 dry red chillies. Pour this seasoning over the chutney, mix well, and adjust salt to taste.
