Phodnicha Bhat, Maharashtrian Style Fried Rice

Ingredients
- 1 cup White rice, cooked
- 1 unit Onions
- 1 unit Tomatoes
- 3.5 units Curry leaves
- 0.5 teaspoon Ginger garlic paste
- 1 tablespoon Oil
- 0.25 teaspoon Mustard seeds
- 0.25 teaspoon Cumin seeds
- 0.5 teaspoon Salt
- 0.5 teaspoon Red chilli powder
- 0.25 teaspoon Garam masala
- 0.5 unit Lemon
Instructions
- 1Spread the cooked rice on a plate. Sprinkle with red chilli powder, salt, and garam masala. Mix thoroughly to ensure even coating.
- 2Heat oil in a frying pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
- 3Add chopped onions to the pan and sauté until they turn light golden. Incorporate chopped tomatoes and cook until softened.
- 4Add the spiced rice to the frying pan. Stir-fry well, ensuring all ingredients are combined. Squeeze lemon juice over the rice and mix.
- 5Cook the rice on low heat until it becomes aromatic. For variations, consider using turmeric instead of red chilli powder, or substitute garam masala with Malvani Masala or Goda Masala.
