Ingredients

  • 1 cup Unsalted butter
  • 2 cups Granulated sugar
  • 3 each Large eggs
  • 1 tablespoon Lemon zest
  • 4 tablespoons Brandy
  • 3 cups All-purpose flour
  • 1 teaspoon Salt
  • 3 teaspoons Baking powder
  • 2 tablespoons Granulated sugar (Quantity estimated (not specified in original recipe))

Instructions

  1. 1In a mixing bowl, cream together the butter and sugar until light and fluffy. This should take about 3-5 minutes.
  2. 2Add the eggs, lemon zest, and brandy to the butter and sugar mixture. Beat until well combined and smooth.
  3. 3In a separate bowl, whisk together the flour, salt, and baking powder.
  4. 4Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. The dough should be stiff enough to roll out.
  5. 5Lightly flour a clean work surface. Place a portion of the dough on the floured surface and lightly toss it with your hands to coat. Dust a rolling pin with flour and roll the dough to about 1/8 inch thickness. Use cookie cutters to cut out shapes.
  6. 6Preheat oven to 350°F (175°C). Place the cookie cutouts on a baking sheet lined with parchment paper. Bake for 10-15 minutes, or until the edges are lightly golden brown. Sprinkle the tops with granulated sugar just before removing from the oven.
  7. 7Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Store in an airtight container.
