Ingredients
- 1 cup Unsalted butter
- 2 cups Granulated sugar
- 3 each Large eggs
- 1 tablespoon Lemon zest
- 4 tablespoons Brandy
- 3 cups All-purpose flour
- 1 teaspoon Salt
- 3 teaspoons Baking powder
- 2 tablespoons Granulated sugar (Quantity estimated (not specified in original recipe))
Instructions
- 1In a mixing bowl, cream together the butter and sugar until light and fluffy. This should take about 3-5 minutes.
- 2Add the eggs, lemon zest, and brandy to the butter and sugar mixture. Beat until well combined and smooth.
- 3In a separate bowl, whisk together the flour, salt, and baking powder.
- 4Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. The dough should be stiff enough to roll out.
- 5Lightly flour a clean work surface. Place a portion of the dough on the floured surface and lightly toss it with your hands to coat. Dust a rolling pin with flour and roll the dough to about 1/8 inch thickness. Use cookie cutters to cut out shapes.
- 6Preheat oven to 350°F (175°C). Place the cookie cutouts on a baking sheet lined with parchment paper. Bake for 10-15 minutes, or until the edges are lightly golden brown. Sprinkle the tops with granulated sugar just before removing from the oven.
- 7Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Store in an airtight container.
