RYE BREAD TORTE

Ingredients
- 4 large Large eggs
- 1 cup Granulated sugar
- 1 cup Dry rye bread crumbs
- 1 teaspoon Baking powder
- 1/8 teaspoon Salt
- 1/2 cup Ground almonds
- 2 tablespoons Sherry
Instructions
- 1In a large bowl, beat the yolks of the eggs until they are very light and fluffy. Gradually add the sugar, continuing to beat until the mixture is well combined and pale in color.
- 2In a separate bowl, combine the rye bread crumbs, baking powder, and salt. Mix well to ensure the baking powder is evenly distributed.
- 3Moisten the ground almonds with the sherry. Add the rye bread crumb mixture to the egg yolk mixture and stir to combine. Then, add the sherry-soaked almonds and mix well.
- 4In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the batter. Pour the mixture into an ungreased cake pan. Bake in a preheated moderate oven at 350°F (175°C) for 30 minutes, or until a toothpick inserted into the center comes out clean.
