  • 2 tablespoons Blanched almonds, pounded (Quantity estimated (not specified in original recipe))
  • 0 as needed Sweet brandy or fruit sauce (For serving)

Instructions

  1. 1In a large bowl, cream together the butter and powdered sugar until light and fluffy. This should take about 5 minutes.
  2. 2Add the egg yolks one at a time, mixing well after each addition. Stir in the grated lemon zest.
  3. 3Stone the raisins and add them to the mixture, along with the finely chopped citron.
  4. 4Gradually add the flour, which has been sifted three or four times, to the mixture. In a separate bowl, beat the egg whites until stiff peaks form, and then gently fold them into the batter.
  5. 5Butter a pudding mold generously. Sprinkle the bottom and sides with the blanched and pounded almonds.
  6. 6Pour the mixture into the prepared mold. Place the mold in a large pot with simmering water, ensuring the water comes halfway up the sides of the mold. Cover the pot and steam for 3 hours, or until a skewer inserted into the center comes out clean. Alternatively, bake in a preheated oven at 350°F (175°C) for 2.5-3 hours.
  7. 7Remove the pudding from the mold and serve warm with sweet brandy or fruit sauce.
