POPOVERS
These classic popovers are light, airy, and incredibly satisfying, with a golden-brown, crispy exterior and a tender, fluffy interior. The simple batter of milk, flour, eggs, and salt creates a delightful contrast of textures and a rich, buttery flavor. Serve them hot from the oven for a comforting and elegant breakfast or brunch.
Ingredients
- 2 cups Milk
- 2 cups All-purpose flour
- 3 units Large eggs
- 1 teaspoon Salt
- 2 tablespoons Butter (Quantity estimated (not specified in original recipe))
Instructions
- 1In a large bowl, whisk together the milk, flour, egg yolks, and salt until the batter is smooth. In a separate bowl, beat the egg whites until frothy.
- 2Preheat the oven to 450°F (230°C). Generously butter the inside of six to eight popover cups or a muffin tin. Place the cups in the oven while it preheats to heat the cups.
- 3Quickly fold the beaten egg whites into the batter. Carefully remove the hot cups from the oven and fill each cup to the brim with batter. Return the pan to the oven and bake for 20 minutes. Reduce the oven temperature to 350°F (175°C) and bake for an additional 10 minutes, or until the popovers are puffed and golden brown.
- 4Serve the popovers immediately while hot, folded lightly in a napkin.
