Ingredients

  • 1 medium Fresh Pineapple
  • 1/2 cup Granulated Sugar
  • 2 pie crusts Rich Pie Dough
  • 1/2 pint Heavy Cream

Instructions

  1. 1Peel and core the pineapple. Cut the pineapple into small slices. Place the slices in a covered dish and sprinkle generously with sugar. Allow the pineapple to sit, covered, to draw out the juice for about 15 minutes.
  2. 2Preheat oven to 400°F (200°C). Bake two pie crusts on perforated pie plates until golden brown. This should take approximately 20-25 minutes.
  3. 3Once the pineapple has stewed, mash it. Allow the mashed pineapple to cool. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mashed pineapple.
  4. 4Once the crusts are baked and cooled, fill them with the pineapple and whipped cream mixture. Serve immediately or chill for later.
