PINEAPPLE PIE, No. 2

Ingredients
- 1 medium Fresh Pineapple
- 1/2 cup Granulated Sugar
- 2 pie crusts Rich Pie Dough
- 1/2 pint Heavy Cream
Instructions
- 1Peel and core the pineapple. Cut the pineapple into small slices. Place the slices in a covered dish and sprinkle generously with sugar. Allow the pineapple to sit, covered, to draw out the juice for about 15 minutes.
- 2Preheat oven to 400°F (200°C). Bake two pie crusts on perforated pie plates until golden brown. This should take approximately 20-25 minutes.
- 3Once the pineapple has stewed, mash it. Allow the mashed pineapple to cool. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mashed pineapple.
- 4Once the crusts are baked and cooled, fill them with the pineapple and whipped cream mixture. Serve immediately or chill for later.
